Sunday nights are my favorite. Most people hate them, dreading work, school, or whatever they have to wake up for Monday morning… But Sundays to me, have the best afternoons/nights.
Sundays to me usually just mean lounging on the couch all day, in sweats, browsing foodgawker. With of course, the fireplace going and a nice glass of red wine. The best part of Sundays? The late afternoon tapas my dad and I prepare every week, or what’s called a “borrel” here in Holland. Lots of peanuts, cashews, olives and feta, cracker toasts with Brie, smoked salmon, and other cheeses. But nothing measures up to my favorite, ensalada caprese
And it’s super easy to make! We improvised a bit this time around, because we didn’t have any fresh basil on hand, but aren’t the bite-sized skewers adorable? Mini must be the theme of this weekend, starting with my mini cinnamon rolls, and now with these yummy cherry tomatoes and little balls of fresh mozzarella, covered in balsamic dressing and olive oil. Top them off with a bit of course sea salt, freshly ground pepper and basil leaves (or in our case, dried basil). ENJOY!
